Recipe: Easy, Delicious Portobello Pesto Mushroom Burger

Hello lovely people!

Today I am excited to tell you about a delicious vegetarian recipe I learned at a dinner party I attended recently. This recipe for Portobello Pesto Mushroom Burger was originally discovered by my friend’s husband, who is a “beginner” in the kitchen. So if he can make these, you can too! And, they are delicious. I’m getting hungry just writing about it.

Step 1: In a bowl, combine ½ cup balsamic vinegar, 1 tbsp red wine, 1 tbsp garlic powder, and salt. Pour in ¼ cup of olive oil into the bowl while whisking so that everything mixes well.

Step 2: Cut the stems off of 4 Portobello mushrooms, wash, and pat dry with a paper towel. Place the mushrooms cap-side down on a baking tray.

Step 3: Pour the mixture on top of the mushrooms and let it sit at room temperature for 30 minutes.

Step 4: Meanwhile, toast some bread. My friend’s husband toasted ciabatta bread on a pan.

Step 5: Cook the mushrooms on a pan until they are tender and done.

Step 6: Dress the toasted bread with pesto, tomatoes, lettuce, add in the mushrooms and close it with another slice of bread to make a sandwich.

You can also eat it open face to reduce carb intake. Bon apetit!
